Grape Varieties:100% Belat
Elaboration and aging:The Belat is the first variety resulting from the project to recover ancient varieties that we have carried out since 1999. Its DNA indicates that it is autochthonous and unique. Unfortunately we will have only about 500 bottles of each vintage until 2021. Belat comes from veiled and means something that was covered by a veil - in this case by the veil of time - and gives a wine that is especially reminiscent of the great Pinot Noirs of Burgundy or Piemontese Barbera. The stay in the barrel has just given it finesse, delicacy and the seal of a wine of the highest level.
Winemaking
Fermentation and maceration with the skins, malolactic fermentation and ageing for twelve months in 500 litre French oak barrels.
Ageing
15 months in 500L French oak barrels.
Tasting note of the winery:• View: A delicate wine with a light burgundian colour,.
• Nose: Fine aromas of pipe tobacco. menthol, coffee and ripe fruit.
• Mouth: It has a sweet velvety tannic structure with vibrant acidity giving it freshness and elegance.
Tips and pairings: Cheese, hunter meat, chicken and chocolate.
