Elaboration and aging:
A bold Clàssic Penedès, with no added sulphites made according to the ancestral method. No sugars or yeasts were added to proke a secondary fermentation. Just 100% organic Xarel·lo from the Mountains of Ordal.
Winemaking
No sulphites are added at any time during the elaboration process, so, first the must and then the wine are be kept in totally hygienic and aseptic conditions, protecting it at all times with inert gases, avoiding contact with the air to impede irreversible oxidation. The residual sugars left after the initial fermentation in tank are consumed by the yeast during secondary fermentation in the bottle. During disgorging no type of liquor or SO2 is added.
Bottle ageing
>40 months.
